If these weren’t incredibly crispy, chewy and just so darn good, I’d almost be ashamed of how easy they are! 🙂

Simply roll out store bought Sugar Cookie dough (I used Pillsbury)..sure, you could make your own..but why? ~j/k!

Once it’s rolled out to approx. 1″ thickness, sprinkle it liberally all over with cinnamon and sugar. Roll it up, like a jelly roll, wrap it in plastic wrap and stick it in the fridge for at least 10 minutes.

When you’re ready to bake, slice thin (1/2″)  slices off of the roll and lay them flat on your lightly sprayed baking sheet, pressing slightly to make sure they are thin!  If they aren’t thin enough, you won”t get that amazing lace effect!

Bake them at 350 for about 15-ish minutes, or until they look golden and crispy!  Since they’re so thin, they will bake up fast!

While they’re slightly warm, top them with a swirl of  store bought Cream Cheese Frosting, and again..you could make your own..but why?  LOL!  😉
