~Roasted Mini Pumpkin with Brown Butter, Crispy Sage & Pinon!

This is my favorite way to decorate a pumpkin!! :)

Slice a small (about the size of a soup bowl)pumpkin in half and scoop out all of the seeds..
Drizzle each half with Olive Oil, S&P and roast in the oven at 375 degrees, for about 30 minutes, or until it’s tender and the skin is dark.

In a small sauce pan melt some butter (as much as you think you will want)..add in 1/4 cup of Pinon Nuts, and a handful of fresh Sage leaves.
When the butter starts turning brown and smelling nutty, it’s ready! Pour over the roasted Pumpkin half and dig in!
It’s so tender and sweet ..a delicious and healthy way to enjoy pumpkin!
