YUM!!!

?This crunchy and healthy side dish is as tasty as it is gorgeous, and a refreshing addition to your holiday table!! 
Such an absolutely perfect way to jazz up your holiday menu, while still holding true to all the traditional flavors, and ingredients of the season!! 
The balacnce between the tart cranberries, the spicy jalapeno, and the sweet lemon curd is beyond delicious!
It’s SO easy, healthy and colorful..I hope you give this one a try, it’s a winner!

What you’ll need for approx. 2-ish servings (increase the ingredients accordingly to suit your serving requirements)
1 medium apple
1 jalapeno
1 cup of fresh whole cranberries
1 tbsp. chopped parsley
3/4 cup of lemon curd
1 tbsp. of white vinegar
Directions:
Prepare for some knife work..crack your knuckles, stretch, have some spiked Egg Nog! 🙂
Whew..ok, ready!
Core the apple and slice it into super thin slices (I used a Mandolin)
Lay the slices flat and cut them into thin strips..like slaw!

Core, seed and slice the jalapeno..try to keep the slices uniform with the apple slices!
Chop up the Parsley..set aside.
Thinly slice some of the cranberries, but leave some whole as well! 
In the bottom of a medium bowl combine the lemon Curd with the vinegar and mix in the chopped parsley.
Add all of the above ingredients to the bowl, gently mix to evenly coat the slaw with the glaze!
Serve and enjoy..Happy Holidays!!
*HINT*  This would be incredible as a crisp, slaw on the top of a leftover turkey sandwich!!
