I can never resist taking a decadent meal and creating a casual, yet just as delicious, one bite wonder! 
With this version, you can actually enjoy all the flavors of Beef Wellington, while you’re on the couch..screaming at your team! NO reservations, uncomfortable shoes, and stuffy atmosphere required!
And as a bonus, the women won’t mind because we all know that if it’s small, it’s not fattening! 🙂

What you’ll need for approx. 10-12 balls:

1 lb. ground beef
1 Sheet of thawed Puff Pastry
Swiss Cheese slices
Sliced Mushrooms
S&P
1 egg for egg wash (not shown)

Directions:
In a medium bowl mix together the ground beef with whatever seasonings you normally prefer in your burgers/meatballs! Then form the meatballs into about 1″ or so.  Set them aside.

In a sauce pan, saute the mushrooms with S&P until they’re soft.  Add them to a food processor, and pulse until it becomes a paste.

Roll out the Puff Pastry sheet and cut it into squares, large enough to wrap the meatballs in.
Spread the mushroom paste onto the pastry square, top it with some Swiss cheese, and add the meatball to the center.  Brush the edges with the egg wash, and seal very well! 
Bake them all on a baking sheet at 350 degrees, for about 30-40 minutes, or until the pastry is golden and the meat is fully cooked through! 
No steak knife needed here, with your fork you can break through the flaky pastry, down into the moist and cheesy meatball! Not to mention the mushrooms..which make these totally delicious!

Serve with some honey mustard, and to keep it real..some potato chips! 🙂  ~Enjoy!
