Where do I even begin?  Do I mention the Jack Daniel’s Brown Sugar Butter Glaze? 

Do I mention the Toasty Marshmallows..oh yeah, and then there’s the Oven Roasted Sweet Potato!

I’m convinced that I can take an otherwise healthy vegetable, and transform it into something worse for us than a king size snickers bar..like no one else! 
But hey..it’s the holidays, a time to eat and be merry..right?  RIGHT!
After the holidays, I’ll be posting plenty of salad ideas..no worries! 
I’ll getcha back into your skinny jeans pretty darn quick!!
But for now…
~have fun filling out your fat jeans with this unique twist on a very common holiday side dish! 🙂

Here’s how!
What you’ll need for 2 portions:
1 Sweet Potato per person
1 cup brown sugar
1/2 stick of butter
Jack Daniel’s (as much as you like..or none at all)
Mini marshmallows..lots of them!
Directions:???
The perfect union! 🙂

Slice the potatoes into 1/4″ slices all the way across the potato..but NOT cutting down through the bottom!

Bake them in the oven at 350 degrees, until they are fully cooked and soft.
While they’re baking, in a medium sauce pot, melt the butter and brown sugar together….Mmm!
Set it aside (away from a flame) and stir in the Jack Daniel’s…optional!

Baste the potatoes with the glaze, during the rest of the cooking process..however, reserve some glaze for right before serving! 🙂

When the potatoes are done..take them out, and let them cool or the marshmallows will melt as you’re stuffing them!
Fill up all the sections with the mini marshmallows, you may have to gently spread the sections of the potato open in order to add the marshmallows. 

Drizzle the remaining glaze over them.  Put them back into the oven until the marshmallows are brown and melted! 
Let them cool slightly before serving..and if you have some glaze left, drizzle some more on the top!
