~Oatmeal Risotto!

If you think a perfect marriage is not possible, if you’ve lost faith in meant-to-be relationships, here’s our hope!  This union is a divine creation, bigger than all of us!  ;)  These 2 ingredients compliment and support each other like nothing else, they will withstand time, age and haters!  Warm, comforting scoops of thick and creamy Risotto, blended with hearty and nutty oatmeal, coated in a custard like vanilla/cinnamon “cream”!  Ahhh…I need a moment!  :)

So just in case you needed a reason to get out of bed in the morning..give this unique and amazing recipe a try, it’ll do the trick! 

What you’ll need for 4 ‘normal’ person servings! ;)

3 cups of Milk (any fat content is fine)

1/2 cup Sugar

1 tbsp. Cinnamon

A splash of Vanila Extract

1/2 cup Arborio rice

1/2 cup Oats (your fave)

Your favorite fruits or toppings..I had all kinds of goodies ready to top it with, and I didn’t need any of them..it’s that good!!  ;)

Directions:

In a medium sauce pot simmer the milk, sugar, cinnamon & vanilla

While that’s simmering, add 2 tbsp. of butter to a medium frying pan, toast up the oats and the rice! 

Mmm!! There should be a "Toasted Oats" candle! :)

When it smells delicious and nutty..start adding in spoonfuls of the milk mixture, one at a time as it’s absorbed!  Make sure to stir, stir, stir..to get that creaminess!  Keep adding and stirring until the oats and rice are soft and tender, and the sauce it super thick and creamy.  You will use all the milk, if your rice is being stubborn, just use a little more milk! :)

This takes a little time and effort, but it’s more than worth it!  When you taste it, you won’t believe that there is NO cream in this recipe!  It’s actually very healthy!
