Well, there’s not too much I can say about this delicious no-brainer recipe.  Other than I had a lonely apple in the fridge just begging for attention & it happened to be breakfast time!  Breakfast around here on the weekends usually means pancakes.  Sooo..when I decided to put this recipe together, it was pretty much a “duh moment”..haha!  I tend to have lots of those.

..Oh well, this one was a hit!  🙂

These pancakes hold a yummy secret, can you guess?  Yep, there’s a hidden apple slice nestled inside each of those fluffy beauties!  And OMgosh, it’s crazy how something so simple totally turns an otherwise regular pancake breakfast into something super special!  The apple ring gets warm and tender inside of the fluffy pancake, while the Apple Pie Spice, Cinnamon and Nutmeg makes this breakfast taste like a warm slice of Apple Pie!  Not to mention that it’s a great way to sneak some fresh fruit into those kiddos!  🙂

This breakfast is so super easy, you can enlist the help of your little ones.  Let them place the apple rings gently into the batter, that seems to be the fun part..haha!  Just an FYI:  make more of these than you think you’ll need, they really are that ahh-mazing!

As you can see, the warm, thin apple slices are literally suspended inside of the fluffy, spicy, pie-like pancakes!

Such a fun way to enjoy Apples!  And when they’re combined with the warm Nutmeg, Cinnamon and Apple Pie Spice..Ooo, they’re just beyond incredible!

These are as good as Apple Pie~~for breakfast! 🙂

What you’ll need:

Apples, one slice per pancake!

Pancake Mix, and all the necessary ingredients for the batter!

I replaced the water in the batter with milk, just for extra richness!

1/2 tsp. Cinnamon-Sugar

1/4 tsp. Nutmeg

1/4 tsp. Apple Pie Spice

Butter & Syrup..optional, but really good!

Directions:

Core the apple and slice it into approx. 1/4″ slices!

I left the apple skin on, but feel free to peel them if you prefer!

Prepare the pancake batter and add in the spices..mix well!

Spoon the batter onto a hot griddle and gently place one apple ring on top of the batter.

When it’s time to flip it..flip it good!  🙂

Stack em’ up nice and high, with a little butter & a drizzle of Maple Syrup!

You won’t have to yell “breakfast is ready”..everyone will already be waiting at the table!  ~Enjoy!  🙂
