1 Bell Pepper

4 Medium Tomatoes

1 Small Onion

1 Bunch Cilantro

2-3 Garlic Cloves (to taste)

1 Jalapeno (not shown, optional)

2 tbsp. Sugar

Salt and Pepper (to taste)

A grill pan

A Food Processor

Directions: Spray the grill pan with non-stick spray and get it nice and hot. Place all of the Veggies (not the canned tomatoes or cilantro) onto the grill and char them up on both sides; they smell ahh-mazing …

Add all of the grilled veggies, the can of Del Monte Tomatoes, sugar, S&P and the bunch of cilantro into the food processor

Pulse until it’s well blended …

Serve it chilled or at room temp, with some fresh veggies and/or crispy chips! ~Enjoy!

  2. Breakfast has always been the meal to make me feel good. It helps to establish a healthy regimen with a healthy breakfast; those feel-good meals can carry over to the rest of the days meals. Lean protein and complex carbs in the morning are a plus!

  5. Usually comfort food to me is stuff that’s not good for you — like mac & cheese or baked goods. But something that is healthy and makes me feel good is a nice cup of homemade chicken noodle soup!

  17. my mom’s chicken noodle soup is MAGIC! if I feel like I’m getting sick, or my husband does, I whip up a batch of it and it practically cures us instantly (okay, along with some other helpful things). chicken, veggies, broth, and some hot sauce for flavor – what’s more healthy than a cold-curing soup? ;)

  23. My go-to healthy meal is grilled veggie tacos! I’m always changing up what goes inside depending on whats in the fridge. Tonight it was black bean, butternut squash, kale and mushrooms with a ton of yummy seasonings and topped off with my homemade salsa! (I can’t wait to try out your recipe!)

  37. I like to bake chicken breast with the tomato and green chili’s for about two hours, covered with foil until you can shred the chicken with two forks. I use this for tacos. So delicious! Bake at 350.

    What meals do we like to make – we like to make meals that are simple enough that the home cook can make them as well. We, also, like to use a lot of fresh ingredients and spices. Fresh spicy peppers are often found in our kitchen. For instance I just got a pound of serranos in our CSA, not sure what I am going to do with them; but, thinking salsa is a start!

  56. My favorite recipe is canned venison. I open a can, thicken, make some mashed potatoes and veggie DONE fast easy dinner. I pressure can venison with 6 pepper corns and 1/2 sm onion. Been doing this for years and people who tell me they hate venison can’t believe they just ate venison. Takes all the game taste out. Can be used to make so many different dishes!
