I just adore Pancakes, in fact I don’t think I’ve ever met a Pancake I didn’t like.  Short stacks, tall stacks, giant plate sized, and even those little half dollar ones…lol!  Bless the Saint who came up with the concept of flattening out some cake and calling it Breakfast!  🙂

Anyway, like everything, I felt the need to ‘un-plain’ that typical tasty Pancake pile and incorporate one of my favorite cookies into them.  That would be Lemon Cooler Cookies~have you had them..OMG!

Well, now you can have a fluffy, zesty cool Lemony stack of “Cookies”, totally dusted in that classic Powdered Sugar and dripping in one of Lemon’s best friends..Honey!

There’s just nothing like the fresh, clean flavor of Lemon to wake you up!

What you’ll need for 6-8 fluffy Lemony Cool Pancakes:

2 cups of your fave Pancake mix

Approx. 1 cup powdered Sugar..give or take

1 cup water

1 lemon

2 tablespoons of freshly squeezed lemon juice & the zest of 1 lemon

1/2 cup of Lemon Curd..I used store bought

2-4 drops of Yellow Food Coloring..totally optional, but very pretty!

Directions:

In a medium bowl mix together the Water, Lemon Juice, Lemon Curd, Food Coloring and Zest…

Pour it into the Pancake Mix..and stir to combine well…

Pour about 1/3 cup of batter onto your hot griddle and cook up the pancakes until they’re golden on both sides.

Dust them in the Sugar before you stack them up, for maximum Sugar-age…

After you’ve buried dusted them in the Powdered Sugar, and drizzled them in honey, take a moment for yourself to violate them with your eyes…

Now, you can call your troops to the table…

There’s plenty to go around…

But grab some for you..of course, and don’t forget extra Honey!
