I can’t possibly be the only one who is left with extra baked Potatoes Every. Single Time!!!  I know the math..one Potato per person, I know..yet somehow I start with one per person, and end up with 5 leftover baked Potatoes!  Ok..math was never my strong point, but whatever.  I needed a way to make use of these rejects and fast.  If they hang around for too long (like 1 day) my OCD takes over and out they go!

I’m not quite sure what came over me, but I thought if I smash them and bake them again, the edges will get all crispy and then I can top them with all the regular baked Potato suspects and have a crispy Baked Potato!

It worked!  It’s like crispy hash-browns on the outside and a tender Baked Potato on the inside..~Winning!  <does anyone say that anymore cuz I love it//LOL!  😉

What you’ll need:

Horrible math skills

Leftover Baked Potatoes

Some Olive Oil for drizzling

S&P to taste

Any toppings you’d like!

Directions:

Take a leftover Baked Potato and gently smash it with your hand, feel free to pretend it’s you ex!  LOL

Place it onto a baking sheet and drizzle it with some Olive Oil and S&P

Bake at 350 until the edges are all golden and they smell Ahh-mazing!

Top them and eat them! ~Enjoy! 🙂
