Simply put, these are just…little bite-sized, crispy, crunchy, pop-in-your-mouth shrimp tacos resting on a bed of crispy-cold slaw, and sticky-sweet Pineapple Preserves, that will deliciously delight even the most particular popper popping people! ..whew~ 🙂

I love Shrimp Tacos, so I basically just wanted to find a way to eat a ton of them serve them as an appetizer, and here we are!

This was one of the most difficult photo shoots I’ve ever had to do, simply because these poppers kept disappearing!  All self control is lost and before you know it..BOOM..they’re gone!

~Give these amazing little crispy, pop-in-your-mouth, shrimp tacos a try~  you’ll LOVE them!

What you’ll need:

Large Shrimp..peeled, cleaned, washed and dried!  TAIL ON!  🙂

Small Egg Roll/Wonton Wrappers

Pineapple Preserves

Cole Slaw

Oil for frying~  I used Canola

Directions:

Simply lay a single Shrimp onto one of the wrappers, and fold it up, making sure to leave the tail exposed…

Wrap it completely around the entire shrimp, and pinch if together gently to seal, wet fingers help…

Set them aside to dry out for a couple of minutes…

Now fry them up in about 2″ of HOT oil (350 degrees), a few at a time, until they’re evenly golden and crispy on all sides…

Let them drain on some paper towel, just to cool off…

Now you can serve them up any way you’d like~

I LOVE  dipping them into a nice sweet serving of Pineapple Preserves…

There’s plenty to go around if you’re fast…
