As everyone knows Football season is here, and that means FOOD!  I think this is my favorite food time of the year, because we can really let loose, get sticky, get greasy, with no perfectly set table full of judging eyes in sight!  It’s coffee tables and tailgates all the way~AMEN!

Every year I try to come up with new and tasty football food to fulfill that fantasy in all of us.  Easy to eat, tasty as heck and super indulgent.

And that’s exactly what we have here.  Juicy mini meatballs that are lightly battered, and coated in piles of tasty taters that have been seasoned to perfection with parmesan cheese!  That’s good enough to stop right there…BUT, I don’t like to stop at good enough..lol!  Taking them over the top happens when we fry those babies up until they’re irresistibly golden-crispy, then and only then, do they get a nice dunk into puddles of hot sauce, blue cheese, or ranch.

~Pop them into your mouth and you almost won’t care which team wins.  🙂

Ooo~These are perfect for tailgating as well…easy to assemble and drop straight into a portable/tailgate friendly fryer!  Before you know it you will be the King/Queen of the parking lot!  Talk about making new friends…Scooore!

What you’ll need for 12-18 HBFMs (easily double OR triple amounts for more): 

Mini fully cooked, frozen meatballs…deforested for the most part, just s long as they’re not solid ice!

2 cups store bought frozen hash browns..fully defrosted

1/2 cup grated parmesan cheese

salt and pepper to taste for the finished product!

Hot Sauce, Blue Cheese and/or Ranch for dipping

The Batter:
1 cup Flour

1 tbsp. Baking Powder

1 tbsp. dry Italian season..or any seasoning you like!

Salt and Pepper to taste1/4-1/2 cup water as needed for consistency

Oil for frying..I used Canola

Directions:

Dry off your hash browns on some paper towel, mix in the grated parmesan cheese and set aside…

In a medium bowl combine the batter ingredients adding drops of water until it reaches a pancake-batter consistency…

Coat each meatball evenly with the batter…

Drop the battered balls into the hashes browns and work them around so the hash browns stick nicely to the meatballs…

Set them aside as you prepare the rest of them and while the oil gets up to 350 degrees…

Place them, just a few at a time in the oil, making sure to leave room so they can roll around and get evenly golden..

Let them cool…

Sprinkle them with some salt/pepper while they’re warm if you’d like…

They’re safe to share now…hahaha!

Serve them with some ketchup, ranch, blue cheese..OR the ever-so-popular~ HOT SAUCE!  ~Enjoy!  🙂
