What time is it??  …It’s time to magically morph two amazing munchies into one magnificent snack/side/lunch/brunch or dinner!  Yep~~  If Potato Skins partied way too hard with some Pizza..this is what I imagine would result from it.  🙂

Toasty, crispy potato skins, that are filled with all things pizza.

Each bite delivers a saucy, melty-cheesy, pepperoni bite of Pizza/Potato Skin paradise all in one easy-to-clean, no mess sheet pan!

Just think of the sheet pan as a great lazy person’s instant serving platter for all that goodness!

~In just a few minuets you can impress a crowd of “starving” people and be loved forever & ever!  Make LOTS!  🙂

What you’ll need:

Potatoes that are baked and cooled..I used 5 med-small potatoes!

2 cups of shredded Mozzarella

1/2 cup of Marinara Sauce

Pepperoni and any other of your fave Pizza toppings!

Olive Oil

Salt and Pepper..to taste

Italian Seasoning, or Oregano

Hot Pepper Flakes for kick

Ranch Dressing for the best dipping combo EVER!

A sheet pan

Directions:

Gently cut the potatoes in half, and scoop out all of the insides.  (SAVE THE SCOOPED POTATO)  🙂

Now, turn the skins over and drizzle them with some Olive Oil…

And a dash of Salt and Pepper onto the oiled skins…

Place them in a single layer onto the sheet pan.

Fill them with a thin layer of marinara sauce (maybe a tsp. or so)…

And top them with cheese and pepperoni ..and ANY other toppings you like!  A sprinkle of Italian seasoning is great too!

Bake them at 350 degrees for approx. 15 minutes, or until they’re golden, melty and the pepperoni is ..well, you know!

Let them cool just a bit..if you can!

I like to serve them on the sheet pan..I mean, just look at that..lol

If you want to show off with manners and LOTS of cheese-pulling, feel free and serve them on a plate! 😉

Around my house, we serve them with Ranch dressing, because..YUM!  But you can top them with anything you like…
