Not your ordinary Shepherd’s Pie Y’all! 🙂

? I just couldn’t leave the traditional, perfectly fine, Shepherd’s Pie alone could I?  Nope!

NO disrespect to the good old Shepherd’s Pie..and this is in no way a substitute for the traditional (much loved) recipe, but more like a variation..a change-up, if you will! 
My motive was simple..I had a box of Cornbread Mix in the pantry that had been in there for so long, I actually had to dust it! 
The way I see it, this recipe was born out of necessity, because if anyone in my family actually saw me dusting food, they’d send me to the quiet plains of West Texas to “relax”! 😉

Luckily, it ended up being a winner, and has become a family favorite!  Hope you like it!

What you’ll need:??
1 large can of chili (any variety you like)

All the fixings of a great meal!
1 container of French’s Fried Onions??
1 can of whole kernel corn??
1 box of cornbread
1 1/2 cups of shredded cheddar
1 cup of shredded mozzarella
A medium size baking dish 

Directions:

Stir in those jalapenos!

?Prepare the cornbread batter according to the box instructions, and add in the can of drained corn..mix well.

Slice the jalapeno into very thin strips, and add them to the batter …see pic——————->
In your baking dish add the can of chili and top it with a single layer of the fried onions.
Top that with the shredded mozzarella.
Pour the cornbread batter on top, and sprinkle some of the remaining cheddar and fried onions over that!

All ready to become amazing in the oven!

Bake at 350 for about 35-40 minutes uncovered,
until the cornbread is cooked through and golden!
Serve with sour cream!
This is truly an awesome cold weather, one dish meal! 
The fried onions take it over the top, the jalapeno drives it home and the cheese holds it all together!  Not to mention that the cornbread and chili bake up together, which means less dishes..woo-hoo!
