Sometimes recipes are born out of the most surprising of circumstances! For this one, it was thanks to..”clean out the fridge day!” 

There I was, left holding a huge..almost empty, container of Ricotta that had only about a cup of it left.
I know there are starving children in China, so I didn’t want to throw it away, but what in the world can you do with one cup of Ricotta?
I did what any sane person does when they don’t know what to do with food..I fried it!  🙂 

And what a treat it turned out to be.  If you like fried Mozzarella sticks, you’ll love these!

Here is the simple technique, so you can give it a try when you have some leftover Ricotta!
For approx. 10 balls you will need: 
1 Cup Ricotta
1 1/2 Cups Seasoned Bread Crumbs (reserve a 1/2 cup)
1 egg
2 tbsp. basil (chopped)
1/2 Cup Shredded Mozzarella

Directions:

Combine all of the above ingredients into a medium bowl..leaving out the 1/2 cup of  reserved bread crumbs.
Mix well, and form into approx 1″ balls, roll the balls in the reserved bread crumbs to coat, and fry in shallow Canola Oil until they’re golden on all sides!! 
Salt them when they’re warm, and then bite through the crunchy crust, down into the creamy, cheesy center..so good!

*HINT* Serve with Marinara for dipping!  These are softer than Mozzarella sticks, so if you have guests over, use a fork..or not!  🙂
