Cherry Cheesecake is one of my all-time favorite desserts!  But, I’d be crippled with guilt if I actually sat down and ate an entire piece of such a rich cake!

So, I figured I’d make little bite sized cookies with the same ingredients, and enjoy all the elements of cheesecake..without all the calories!  Unfortunately, I ate 6 of them..lol! 🙂
I should also mention that this recipe is super simple, making the payoff even sweeter!

What you’ll need:
1 box of cherry chip cake mix (white cake is fine too)
1 8oz. container of softened cream cheese
2 cups of cherry preserves ( 1cup reserved to fill up the thumbprints)
1/2 cup powdered sugar
1 tsp. vanilla extract
Some graham cracker crumbs  for garnish (optional)

Directions:
In a medium bowl combine the cream cheese, powdered sugar and vanilla extract..mix well!
Slowly stir in the cake mix and the 1 cup of cherry preserves…Mix well, until the batter is well blended!

Scoop 1″ mounds of the cookie dough onto a greased baking sheet, and bake at 350 for about 15 minutes, or until the cookies are cooked through.  Remove and while they’re still warm, make a thumbprint in the center and fill it with a small amount of the reserved cherry preserves.  Sprinkle the tops with some graham cracker crumbs, and they’re all ready to eat!  One bite and you’ll swear you’re eating a decadent and scrumptious piece of cherry cheesecake!  ~Enjoy!  🙂
