Well oh joy!  For most of us, we lost a precious hour of our weekend..ugh!   I don’t know about you, but that sucks makes me need comfort food..lol!  I know it’s perfectly acceptable to have a giant doughnut, piece of cake or a gooey muffin as long as it’s for ‘breakfast’..right?!  So I could probably get away with having some comforting cookies if I really wanted to start my day that way!  And not just any cookies..those “Mother’s” Iced Oatmeal Cookies that are so darn good, mmm!

SO, I thought..why not make a healthier version & fun alternative to those great cookies by recreating them in some warm Oatmeal?  Then maybe I could have Iced Oatmeal “cookies” for breakfast everyday once in a while, no problem!  🙂

Aside from always trying to find new and interesting ways to keep oatmeal from becoming boring, this method happens to taste just as good, as sticking your spoon down into a warm, freshly baked pile of iced oatmeal cookies!  So creamy, thick and sinful tasting!  All I know, is this is my new favorite way to enjoy an oatmeal breakfast..so decadent, healthy & almost guilt free!  🙂

 

What you’ll need for 2 medium servings:

1 cup of your favorite oatmeal

1/4 cup brown sugar

1 tbsp. cinnamon (not shown)

The Icing:

1 cup powdered sugar

approx. 2 tbsp. milk

Mix together until you have a thick icing..you may have to adjust the measurements to your liking!!

Directions:

Just make your oatmeal as you normally do

Mix your icing, and pour a nice layer of it top of your oatmeal

Sprinkle with some Cinnamon

 

Dig in and you’ll swear you’re eating a warm, gooey, fresh Iced Oatmeal Cookie, with your spoon! ~Enjoy!  🙂
