Just made a batch of these and they are heavenly! Here in the UK, our peanut butter is a tad on the salty side, so I mixed 2 parts double (heavy) cream to 1 part peanut butter to give it the texture of mousse. Then I filled the brownie ‘cups’ and topped with shaved chocolate and a raspberry. I started off with 4 dozen – got about 40 left (and they are for our dessert tonight – whoops!)

Have bookmarked half a dozen more recipes – will definitely be a regular visitor!
