this non-baker (not much of a cook, really) made these cookies for a colleague’s birthday and thought the roof was gonna come off our conference room…they were a HUGE hit (not to mention a surprise: “YOU baked?”). used Myer’s Rum instead of Malibu (and no jar, but a snack-sized zip bag worked great); left out coconut but will probably put in 1/2 the batch next time. yes, there will be a next time. thank you!!!

I’m not sure if there’s a specific name for oatmeal cookies when you throw in coconut, choc chips, raisins (golden is my preference), butterscotch chips, the kitchen sink, etc. That’s how I like to make mine. They are already scrumptious. I imagine the addition of pre-soaking the raisins in Malibu would take them over the top. But I’m looking forward to trying them. Thanks for the recipe 😉

This is EXACTLY what I was looking for! I just set out to make my Oatmeal Raisin Cookies, only to discover that I only had Malibu instead of regular Rum. I thought about using Apple Juice, but this will be so much better. I decided to see if anyone else had done it and what they thought about the results and – There You Were! Thanks! I’m adding chocolate chips and pecans to half the batch. Yum!
