My FAV enchiladas was at a Mexican place we had here in Greensboro, NC – called “Tijuana Fats” and boy do I miss it. I loved their enchiladas and it was with white sauce of some kind. YUMMY!

In reply to jackie. I haven't tried this yet Jackie but a can of cheddar cheese soup or cream of mushroom might work. I would think the cheese soup might be the best alternative though.
