					<description><![CDATA[I made this and OMG it is amazing. I made it for dinner but it has flavors that I enjoy more at breakfast. My husband said that it tasted like an omelet without the eggs and he loved it. He added a cut up tomato to his third serving (like he does with omletes). I had half a pan leftover (it heated up well in the oven to crisp it back up.) I cooked an omelet with tomatoes and we ate the leftovers mixed with the eggs. It took the dish to a whole nother level of awesomeness. This recipe could be great so many ways. I think the recipe the way it is, with a little sour cream and some green onions would be awesome, like a loaded baked potato. Big fan right here. This recipe is a real winner.]]></description>
