Hmmmm. I wonder if you can par cook the bacon a little to render the fat some, then roll them up, then dip them in egg and bread crumb mixture like regular mozzarella sticks if the bacon would still crisp up… May have to give it a try… Love experimenting with cooking.

You can par cook the bacon, just to render some of the fat, then wrap the frozen cheese. I par cook bacon when I make stuffed jalepenos.

You can but most of the cheese will melt out while you are frying them. Freezing the cheese makes it take longer for it to melt so your bacon is cooked before the cheese all melts out.
