Just made this today. It's pretty good but i imagine it depends a lot on the mix you use. A different cake mix might have been better. I also would double the coconut topping next time. By the picture i thought it would be a thicker layer, but while i was spreading it i could tell it was just a very thin layer. After trying a piece once it was done and cooled, i thought it would definitely be better with more topping and broiled a little less. Make sure your broiler setting is on high, if it takes longer than 6 minutes or so and it's still not quite golden brown i would just take it out anyway. Broil too long and the topping becomes a little too chewy, although if doubled i don't think that would be an issue. Next time i think i'll also make this a little more like tres leches, add more liquids to the topping, poke a bunch of holes in the cake with a toothpick and let it sit a while before popping it under the broiler. I just love tres leches and think this would be even better soaked in a buttermilk/coconut milk/condensed milk mixture with double the coconut topping. Still a good cake as is but there is a bit of room for improvement, and make sure to choose a really good cake mix!

I LOVE BUTTERMILK AND COCONUT SO THIS HAS TO BE WONDERFUL. I HAVEN'T SEEN ANY BUTTERMILK IN SMALL SIZE. I USUALLY CAN ONLY FIND QUARTS. SOMETIMES WHEN I GET LUCKY I FIND 1/2 GALLON SIZE. I USE BUTTERMILK ALMOST DAILY. I USE IT TO MAKE CORNBREAD, BISCUITS, WAFFLES & PANCAKES. SOMETIMES WHEN I ONLY HAVE A QUART I USE SOME AND THEN TOP OFF THE BOTTLE WITH SWEET MILK AND SHAKE IT UP. THEN NEXT TIME I USE IT I'M STARTING OUT WITH A FULL QUART. BUTTERMILK WILL KEEP FOR A VERY VERY LONG TIME PASSED THE EXPIRATION DATE. I JUST ALWAYS SMELL IT BEFORE I USE IT. IF IT SMELLS SOURED DUMP IT. THIS VERY DOES NOT HAPPEN IN MY HOUSE VERY OFTEN. I HAVE YET TO TRY FREEZING IT BUT I THINK I WILL.

This looks wonderful, love me some coconut and sweetened condensed milk. BTW, I have heard that buttermilk can be frozen with good results. Thanks for the constant tweaks to my evil appetite. Love your site!
