In reply to Lynne @ 365 Days of Baking and More. The recipe doesn't show how much coconut to use, looking at the photo of the panko/ Coconut mixture, I'm assuming 1cup. Also, I'm going to use 1 T. of reserved Pineapple juice & the soaking Rum for the Glaze. I can hardly wait to try this!

This recipe is very intriguing and I will be making these. I love baking and cooking and I just cut up some fresh pineapple. But my take on this recipe is that I’m gonna try and use the core of the pineapple instead. I know they say you shouldn’t eat this but I have eaten the core. Yes, I know it’s fiberous but I think this recipe will help out. Thanks

Wow! I just found your website (& fb page), You may have the most amazing and easy recipes I have ever seen! This maybe my favorite item, but I’ve thought that about 10 of your recipes so far! ?
I have a favor to ask, a few friends and I do a charity fundraiser every year for an animal rescue/shelter/charity, this year it’s Operation Blankets of Love. They help supply rescues with blankets (especially) and other items to help make an animal’s stay in the shelter comfortable.
Anyway to make a long story short,we do our party on fb (this year we will be starting the week of Thanksgiving and running through Dec 15th),and we play games and “serve” virtual food and drinks. Could I use some of your pictures? (and Thank You for having your website name already on them!)
