~Bacon & Cheddar Stuffed Hasselback Potatoes!

WOW..You just can’t go wrong with this one!
Creamy roasted potatoes with cheddar cheese and bacon in EVERY bite!!

Crisp up your favorite bacon , and set it aside..
Peel one potato per person and make slices that go almost to the bottom, but not through it. 
Drizzle the potatoes with some Olive Oil, S&P, (do NOT stuff them yet) and bake them at 350 for about 25 minutes, or until they are slightly golden and tender! 
Remove them from the oven..NOW you can stuff them with the bacon and cheddar! Yay! :)

Break off pieces of the bacon that will fit in between each slice and squeeze in a slice of cheddar right next to it!
Put them back into the oven for about 5 minutes..just until the cheese is melted!
These are so incredible..ENJOY!!  :)

*HINT* Serve with some Sour Cream and Chives on the side!

  1. Sounded so good so I just ran to make one for supper. After all the sweet party food all weekend this hits the spot. Cooking fresh food for my family and friends is something that I can still do to contribute to my share. Happy holidays to all.
