My fantasy of becoming a State Fair Food vendor is now one step closer to reality..haha!

Even I can’t believe that I had the guts, the audacity, the giblets to deep fry Corn on the cob, but clearly…I did it.  And let me just tell you (before you run far, far away)..this Corn has the potential to take the State Fair food experience to unreachable levels of awesomeness!  I’m at a loss for words to describe how DECADENT, SUCCULENT and down-right DELICIOUS this Corn is…hopefully the ALL-CAPS helped..LOL!

Honestly, the light, crispity-crunchity, crust snuggles the Corn in the most luscious and loving way, trapping in every. single, drop. of moisture and flavor!  Wear a yellow shirt when you eat this because you will have Corn juice and Butter running all down your chin..no joke!

~In a matter of minutes, you too can reach crazy corn euphoria..go do this, go on…GO!  🙂  You can thank me later!

What you’ll need for 6 crazy Corns:

3 Fresh ears of Corn, cut in half

1/2 cup Flour

1 tbsp. Baking Powder

1 tbsp. of Cajun Seasoning..OR any seasoning you prefer!

Salt and Pepper to taste

Oil for frying..I used Canola

Directions:

In a medium bowl combine the flour with the spice, salt and pepper, and baking powder…

Lightly dust each piece of Corn with the flour and set side…

Now add 1/4-1/2 cup of water to the Flour and mix it up, you’re looking for a pancake batter consistency.

Brush the batter all over the ears of Corn, you don’t have to be perfect, some corn showing through is nice!

Now place them, one at a time into the hot (350 degree) oil and fry them up, turning as you go for a nice even fry!

Let them cool just a bit…

Now is a good time to sprinkle them with your favorite Corn on the cob toppings…

Serve them to everyone that you love LOTS!!

Ohh..and don’t forget some melted butter to plunge them into…that’s right!
