Perfect use for the upcoming holiday’s leftover mashed potatoes!

Add your mashed potatoes (the homemade chunky kind work the best) to a bowl and stir in one large egg,
Depending on how seasoned the original potatoes were, add S&P to taste!  Gently stir in some crispy bacon pieces and start forming about 1″ balls.  Add a small cube of Sharp Cheddar to the center of the ball and form a tight seal around it!  Roll the balls in Panko crumbs and fry them up..I use Canola oil!

Serve with a side of Sour Cream and Chives for dipping!! 
Grab yours quickly, they don’t last long!
