Sometimes I question my own sanity!! 

I’m embarrassed to admit that right now it’s 1:27 AM, I went to bed like a normal person at a “normal” time, however, like a brick to the head..yep, a cookie idea*see the idea disclaimer at the bottom of the page!
Could it wait until later in the morning?? 
Hahaha…right!
The second I pushed the “pre-heat” button, there was no turning back!  There I was, putting 2 ingredients together that logically..I didn’t think could work….but, a middle of the night recipe fail is almost like no fail at all!! 
What happens in the kitchen past midnight..stays in the kitchen!

Thankfully, I redeemed myself with the end result! 🙂

YES..this combo works! 🙂 

? Here’s how you can try these (at a respectable hour) in your house!
You will need:
1 box of Red Velvet Cake Mix
1 tub of Cool Whip
White Chocolate “Amazing Glazes” for drizzling, and some shaved chocolate for the top.. (not shown)

Directions:
Let the Cool Whip defrost just until it is a spoonable consistency..sort of like frosting!  In a bowl, mix them together (it takes some muscle)
The batter will be very cold when you’re scooping it onto the baking sheet!
Drop spoonfuls of the batter onto a parchment lined baking sheet, and bake at 350 for about 15 minutes, or until the cookies firm up!  That’s it!

Let them cool and drizzle them with a glaze or cream cheese frosting!

These turn out to be a flat, soft and chewy cookie!  The Cool Whip gives them a great texture..and surprisingly, didn’t just disappear with the heat of the oven.

*HINT*  Use ANY flavor of cake mix you like..they’ll all turn out great!  Endless possibilities!
