I’ve never really thought of Cranberry Sauce as anything special, and definitely nothing that would ever require anything more than opening a can! 
However, this year I decided to treat it as one of the main stars of the table! That change in attitude must have made it very happy..because what it gave back to me is nothing short of incredible!  Give this a try and breathe new life into this holiday table staple…it’s as beautiful as it is delicious, and will highlight everything it’s added to!  The balance of textures & flavors is perfection!

What you’ll need:
1 bag of fresh Cranberries
1 Star Fruit..thinly sliced
1/2 cup water
1/2 cup sugar
1/4 cup Amaretto
1/4 cup Pecans..chopped
1/4 cup candied Pineapple..chopped
1/4 cup Scallions..chopped
1tbsp. freshly grated ginger (or powdered)
1 tsp. Apple pie Spice
a few Star Anise for simmering

Directions:
In a large pot simmer the cranberries, sugar, water, star anise, ginger, Amaretto, and the apple pie spice until the cranberries pop! 
Then gently fold in the scallions, pineapple, nuts and star fruit..just until warmed them through!
Remove the Star Anise..and add to a festive bowl, serve along side your holiday meal..for a fresh, new and delicious spin on good old cranberry sauce!!  This is good warm, chilled or at room temperature.
