I think it’s safe to say that everyone has their favorite part of a pie!  Much like belly buttons, some people are innies & some people are outies!  For me, it depends on the pie, and my mood, and where I am, and who I’m with…confused yet?  😉  What I’m trying to say, is that sometimes I’m in an “outie” mood!  The mood that makes me nibble away at all of the crust and leave the filling behind, usually to be scooped up by my sister one of the “innies” at the table.

Of course, my love of pie crust got me thinking..why couldn’t we have a cookie, totally made of flaky pie crust?  That would give all of us Outies a guilt free option, that won’t attract funny looks & comments from the Innies at the table?!  I mean, it’s totally normal to eat a cookie right..and now no one can hate us for wasting any of their precious pie filling..lol!:)

Yep, this is our answer! Crispy & flaky Pie Crust cookies that are everything you can imagine and more!  Not only do they make the perfect spoon for ice cream, but they’re sweet & warm with a cinnamon sugar crunch that’s incredible!  And they’re the perfect size to enjoy anytime you’re in the mood for just the pie crust!  Perfect for dipping into Ice Cream, or even with a hot cup of coffee!  A unique lite & crislpy delicious little pie crust cookie treat!

Make a batch and don’t share with the “Innies”!   🙂

 

 

What you’ll need:

Refrigerated Pie Crust..one sheet will yield about 5 medium cookies

Cinnamon & Sugar

1 egg

A circle cutter,  to cut the cookies

 

 

 

 

 

Directions:

Roll out the sheet of pie crust onto a floured board

 

 

Make an egg wash (a beaten egg and a splash of water) and set it aside

Evenly slice the dough into about 1″ strips and weave them as if to make a lattice pie crust

With your cutter, cut out circles into the size you want your cookies to be

 

Brush them with some egg wash

 

 

 

 

 

 

 

Load Dust them with cinnamon & sugar, bake them on a baking sheet at 350 degrees, for about 12 minutes, or until they’re golden and crispy

 

 

 

Let them cool and gobble them up the way you would some delicious pie crust..or pile them up like cookies!  ~Enjoy!  🙂
