Don’t rub your eyes, or adjust your settings..your vision is just fine!!  YES, I have posted the unthinkable..a Salad!  I know..you’re probably thinking my computer has been hacked by an angry Diabetic Vegan, but it’s me..I promise!  And, I bring you 2 recipes for the price of 1 today~You. Are. Welcome!  😉

We’re starting out this health-fest with a large, delicious Salad complete with an edible and scrumptious Crispy Parmesan serving bowl…

Then we have for you a bonus recipe:  Light & crunchy, Cheesy Garlicky, homemade Artisan Croutons, perfect for adding that tasty ‘bling’ to the top of your fave Salad…

You honestly didn’t think I’d serve a Salad without some crispy, fried Croutons..did you?  ..hmmm?!

Make sure to bookmark this one folks, because I can’t promise another Salad, at least for a while!  😉

What you’ll need:

Your fave Salad mix if greens & toppings  (you pick those)

1 Cup Shredded Parmesan Cheese (for the bowl)

A dash of Pepper..optional

A 9″ round baking pan

A smaller bowl (approx. 4″) to mold the Cheese onto.

Your fave dressing to toss the greens..I used Olive Oil, S&P!

The Artisan Croutons:

1 Roll of Pillsbury French Loaf

Oil for frying

A large Zipper bag

*You can use any Crouton Seasoning Blend that you like, this is what I used…

1 Cup Grated Parmesan Cheese

2 tbsp. Oregano

2 tbsp. Garlic Powder

S&P to taste

Directions:

Make the edible Parmesan Bowl…

On a round non-stick sprayed, sheet pan, evenly spread 1 cup of Shredded Parmesan Cheese sprinkled with a dash of Black Pepper…

Bake at 350 for approx. 10 minutes ~just until it’s bubbly and slightly golden.

While it’s warm, gently slide the cheese off of the pan in one piece, turn the bowl over and drape the cheese over it, carefully molding the cheese to the shape of the bowl, set it aside just like this to set up…

Time to make the Croutons!  🙂

In a medium pot heat up approx. 2″ of Oil (I used Canola).

In a small bowl mix together the Crouton Seasoning Blend (or your fave), set aside…

Remove the French Bread Dough, kind of unroll it and simply rip off small chunks (approx. 1″ or so)  just rip them up..this is what gives them the awesome Artisan look and texture…

Fry up them up in small batches until they’re crispy and golden on all sides…

Drain and cool them on Paper Towel, and add them into a large Zipper bag with the Crouton Seasoning Blend and toss..toss..toss!!

Now mix your Salad greens with your toppings and dressing of your choice.  Add it all into your beautifully edible Parmesan Bowl..

Don’t forget to top it with those amazing Croutons…

You deserve a huge dessert after this one…lol!
