Once in a while a dessert comes along (and by ‘comes along’, I mean ‘enters my brain at 2 am’) that totally morphs one already amazing treat into something that seems to be SO good, SO easy and SO darn delicious, you’d think it could replace many different desserts all at the same time!  That seems to be the case here~

Each layer of this sweet and scrumptious Cheesecakey dessert takes your sweet-tooth satisfaction level to heights its never been before, and can only hope to go again.

A soft, Vanilla Cake layer becomes the fabulous foundation for a light & fluffy Cheesecake dream come true, that seem to marry each other in the oven!!  Then the whole thing is lovingly covered with sweet, bursting Blueberries and a heavenly cloud of Whipped Cream!  Oh, and did I mention that this is so easy, no one will ever guess you didn’t even break a sweat in the kitchen putting it together?

~Yep…it’s true, but it can be our secret…Shhh!  🙂

What you’ll need:

1 box of French Vanilla Cake Mix (or any flavor you like)

1-21 oz. can Blueberry Pie Filling

4 cups Powdered Sugar

3 Eggs

1/2 cup of Butter…melted (one stick)

1-8 oz. block of Cream Cheese…softened

2-3 cups of Cool Whip…OR homemade Whipped Cream

A 9×13 baking pan…sprayed

An electric hand mixer…very helpful!

Directions:

In a medium bowl, mix together (with a large whisk/spoon and muscles) the Cake Mix, Butter and one egg…

Press it down evenly into the baking pan, set aside… (this will be thick and almost dough-like, use the back of a spoon and/OR your CLEAN hands to get it in there)

In another medium bowl, mix together (with the electric hand mixer) the 2 Eggs, Cream Cheese and Powdered Sugar…

Start on low speed, and gradually add in the Powdered sugar one cup at a time, until it’s smooth~

Pour that onto the Cake Bottom…

Bake it at 350 for approx. 30-45 minutes, until it’s golden and firm all the way through.

Let it cool completely…

NOW~  Evenly pour the Blueberries all over the top…

Spread the Whipped Topping evenly all over the Blueberries.  You can do this step with each serving as well, if you don’t plan on eating the entire pan in one sitting!  That way it won’t get soggy!

If you don’t devour the entire pan right away~~keep it in the fridge!!

Serve it up~
