Isn’t this just the best time of year?  We get to create, indulge and entertain with as many delicious, seasonal goodies we can think of.  And there’s no shame in it, why?  …because it’s the holidays,..thats why..haha!  And so..here we are!

We are here with a one of a kind way of enjoying an extraordinary..’ordinary’ holiday side dish staple.  I’ve taken that loved, (but boring typical) Sweet Potato Casserole, and “bombed” it.  I’ve transformed it into a tender, sweet potato, crispy fried dumpling, if you will..that’s exploding all over the place with a filling of..you guessed it~  Marshmallows!  You know..that usual marshmallow topping for this casserole, has now been turned inside out, and stuffed into the sweet potato for a maximum culinary experience that no one will soon forget!

You’ll never have anything quite like this, and everyone will be left talking about them long after the last bomb has detonated!  🙂  They’re so tender, so tasty and SO darn good with that gooey filling, that no matter how many you make..you ‘ll wish you had more!

~Jazz up that holiday table and go do this..you will LOVE them!

What you’ll need for 5 good size bombs (double accordingly for more):

The inside of one med/large COOKED Sweet Potato…approx. (1.5 cups or so)

2 cups flour..only one cup is shown, because I didn’t know it would need 2.

1 Egg

salt and pepper to tatste

ONE regular size marshmallow per bomb..or a few little ones.

Powdered Sugar for topping.optional

Oil for frying..I used Canola

A food processor/blender ..to make the dough ball

Directions:

Scoop out the flesh of the sweet potato and add it into the processor with the egg and salt and pepper, pulse to combine, then add 1 cup of the flour and pulse again until combined.

Now add in the other cup of flour and blend…

It will form a dough ball like this..

Scoop out about 2 tablespoons of the dough and place a marshmallow into the center, rolling the dough around the marshmallow until it’s completely sealed…

Fry them up one at a time in the hot (350 degrees) oil, until they’re evenly golden and firm.

Let them cool and top them with some powdered sugar…

Serve them warm though for the BEST sweet potato experience EVER!
