Well..Dandies done did it again!  They managed to incorporate THE flavor of the season *Pumpkin Spice*..duh, into their unbelievably delicious marshmallows!  🙂

When I tell you that Dandies Marshmallows are the BEST, I don’t say that lightly, but they ARE! They’re like no other marshmallow on the market.  Not only are they vegan, they’re creamy, melt in your mouth delicious and the perfect pop-in-your-mouth treat!

Since it is the “Pumpkin Spice” time of year, I decided to make use of these delicious little gems inside a super simple no bake cookie that will make the perfect hostess gift of just to have on hand for a chewy and sweet treat!  Each chewy cookie packs a huge flavor punch, and offers a rich, deep, chocolate experience like no other!

These marshmallows are feel good food, as you can totally feel good about giving them to your family and friends…

~Make LOTS!

What you’ll need:

1 bag of Dandies mini marshmallows..either pumpkin spice flavored, or original

1/2 stick of butter
1/2 c. milk
2 c. sugar
1 tsp vanilla
1/4 tsp salt
3 Tbs cocoa
1/2 c. peanut butter
2 1/2-3 c. graham cracker crumbs

Directions:

In a medium saucepan, melt butter, milk, sugar, vanilla, salt and cocoa…

Bring to a boil and let boil for about 90 seconds (boiling longer will make cookies dry).

Remove from heat. Stir in peanut butter, then graham cracker crumbs. I stir the graham crumbs in 1 cup at a time to check the consistency. Adding too many crumbs will make the mixture too thick and makes a dry cookie as well.

Lastly, stir in marshmallows and mix until just combined…

If you over-stir you will lose the marshmallow-swirly effect (which I did the first time making these.)

 

Immediately drop heaping spoonful onto wax paper…

..and let them cool and set up..

Now you can eat them up!  ~Enjoy! 🙂
