For the Waffles:
Prepare eat G.A.N.G.S.T.E.R. Pancake & Waffle Mix as directed on back of pouch.
For the Chicken:
1 lb Chicken Tenders or Strips
1 cup Coconut Milk
2 TBSP Apple Cider Vinegar
1/3 cup Avocado Oil
14 oz bag of Plantain Chips
Spices: 1 tsp dried Parsley, 2 tsp Garlic Powder, 2 tsp Onion Powder, 1/4 tsp Salt
1. Preheat oven or air fryer to 400F.
2. Prepare eat G.A.N.G.S.T.E.R. waffle mix as directed on package, pour batter into waffle maker, and set prepared waffles aside.
3. In a large mixing bowl, stir together coconut milk and ACV. Set aside.
4. In a food processor fitted with an “S” blade, pulse together the plantain chips, tiger nut flour, garlic powder, onion powder, dried parsley and salt until chips are finely ground. Set aside.
5. Pat the chicken strips with a paper towel until dry. Dip each strip first in the coconut milk mixture and then in the dry mixture. Make sure each strip is coated well.
6. If using oven, prepare a baking sheet with either parchment paper or cooking spray, and place chicken strips on the prepared tray. If using air fryer, place chicken strips in the air fryer that has been sprayed with cooking spray. Lightly spray the chicken strips with cooking spray, and bake for 10 minutes. Gently turn the strips over, spray lightly, and bake for another 10-12 minutes.
7. Top your eat G.A.N.G.S.T.E.R. waffles with the chicken and dress with maple syrup or your favorite AIP sauce!

Heather McDonough


Heather is a Nutritional Therapy Practioner, recipe developer and chef who has worked in the health and wellness industry since 2011. After getting a Psoriatic Arthritis diagnosis in 2005, Heather became determined to avoid pharmaceutical therapies and looked to holistic alternatives to heal her body and reverse her symptoms.  Diet therapy has been significant in sending her autoimmune disease into remission.

Heather’s passion for helping people on restricted diets began when she started a small café in Wichita, KS.  She developed a menu that catered to everyone and dazzled patrons who found it difficult to dine out on restricted diets.  Heather enjoys creating G.A.N.G.S.T.E.R. recipes for those who are following an AIP diet or those who want to eat wholesome, gut-friendly, delicious food.  You don’t have to tough it out— eat G.A.N.G.S.T.E.R.

Kerry Brown


Kerry has been in the field of consumer branding for 20 years. Most recently she owned and operated New York City’s most luxurious hotel for dogs. She also worked for eight years with athletic apparel powerhouse lululemon athletica, ultimately overseeing the company’s U.S. Community Marketing during a period of tremendous growth.

Kerry is a Type 1 diabetic, and is thus dependent upon insulin to survive. She has done the strict Auto-Immune Protocol (AIP) diet for months at a time, and eats AIP 90% of her regular diet. She also recently underwent surgery for a partial thyroidectomy. Her body feels healthier, younger and requires 60% less insulin when on full AIP. She loves creating amazing foods that are{” “} G.A.N.G.S.T.E.R. (which is everything AIP is!) – so as to inspire others to actually ENJOY the process of healing themselves.
